Palak Paneer is a nutritious and delicious way to enjoy fresh spinach, combined with protein-rich cottage cheese.
Blanching the spinach correctly ensures the gravy retains a beautiful, bright green color.

🍅 Ingredients
- 250g Paneer (cubed)
- 1 large bunch Spinach (Palak)
- 1 Onion (finely chopped)
- 1 Tomato (chopped)
- 4 cloves Garlic (minced)
- 1 tsp Cumin Seeds
- 2 tbsp Oil or Ghee
- Salt to taste
🍳 Instructions
- Blanch Spinach: Boil spinach leaves in hot water for 2 minutes, then immediately transfer to ice-cold water. Blend into a smooth puree.
- Prepare the Base: Heat ghee in a pan. Add cumin seeds and minced garlic. Sauté until garlic is fragrant and slightly golden.
- Cook Onions & Tomatoes: Add chopped onions and cook until translucent. Add tomatoes and cook until soft and mushy.
- Add Spinach Puree: Pour in the palak puree and salt. Cook for 3-4 minutes. Do not overcook to retain the green color.
- Add Paneer: Gently fold in the paneer cubes. Simmer for another 2 minutes. Add a dash of cream if desired. Serve hot with Roti.
