Palak Paneer is a nutritious and delicious way to enjoy fresh spinach, combined with protein-rich cottage cheese.

Blanching the spinach correctly ensures the gravy retains a beautiful, bright green color.

🍅 Ingredients

  • 250g Paneer (cubed)
  • 1 large bunch Spinach (Palak)
  • 1 Onion (finely chopped)
  • 1 Tomato (chopped)
  • 4 cloves Garlic (minced)
  • 1 tsp Cumin Seeds
  • 2 tbsp Oil or Ghee
  • Salt to taste

🍳 Instructions

  1. Blanch Spinach: Boil spinach leaves in hot water for 2 minutes, then immediately transfer to ice-cold water. Blend into a smooth puree.
  2. Prepare the Base: Heat ghee in a pan. Add cumin seeds and minced garlic. Sauté until garlic is fragrant and slightly golden.
  3. Cook Onions & Tomatoes: Add chopped onions and cook until translucent. Add tomatoes and cook until soft and mushy.
  4. Add Spinach Puree: Pour in the palak puree and salt. Cook for 3-4 minutes. Do not overcook to retain the green color.
  5. Add Paneer: Gently fold in the paneer cubes. Simmer for another 2 minutes. Add a dash of cream if desired. Serve hot with Roti.
