Vegetable Pulao is a versatile and quick rice dish that is perfect for busy weeknights or lunchboxes.

Using whole spices like star anise, cloves, and cardamom infuses the basmati rice with an irresistible aroma.

📖 The Recipe

🍅 Ingredients

  • 1 cup Basmati Rice (washed & soaked)
  • 1/2 cup Mixed Veggies (Carrots, Peas, Beans)
  • 1 Onion (sliced)
  • 1 tsp Cumin Seeds
  • 2 Bay Leaves
  • 2 tbsp Ghee
  • 2 cups Water
  • Salt to taste

🍳 Instructions

  1. Temper Spices: Heat ghee in a pot or pressure cooker. Add cumin seeds, bay leaves, and any other whole spices you like. Let them splutter.
  2. Sauté Onions & Veggies: Add sliced onions and sauté until pink. Add the mixed chopped vegetables and fry for 2 minutes.
  3. Add Rice: Drain the soaked rice and add it to the pot. Stir gently for a minute to coat the rice grains with ghee.
  4. Cook: Pour in 2 cups of water and add salt. Bring to a boil, then lower the heat, cover, and cook until the rice is tender and water is absorbed (about 12-15 minutes).
  5. Fluff and Serve: Let it rest for 5 minutes off the heat. Fluff gently with a fork. Serve hot with Raita and Papad.
