- 1/2 cup Mixed Veggies (Carrots, Peas, Beans)
- 1 Onion (sliced)
- 1 tsp Cumin Seeds
- 2 Bay Leaves
- 2 tbsp Ghee
- 2 cups Water
- Salt to taste
🍳 Instructions
- Temper Spices: Heat ghee in a pot or pressure cooker. Add cumin seeds, bay leaves, and any other whole spices you like. Let them splutter.
- Sauté Onions & Veggies: Add sliced onions and sauté until pink. Add the mixed chopped vegetables and fry for 2 minutes.
- Add Rice: Drain the soaked rice and add it to the pot. Stir gently for a minute to coat the rice grains with ghee.
- Cook: Pour in 2 cups of water and add salt. Bring to a boil, then lower the heat, cover, and cook until the rice is tender and water is absorbed (about 12-15 minutes).
- Fluff and Serve: Let it rest for 5 minutes off the heat. Fluff gently with a fork. Serve hot with Raita and Papad.
